These are delicious served hot fresh from the oven or just as good made the day before and eaten cold. We are just at the end of the peach season and I want to drag it out for as long as possible, the same goes for the sunshine! So this is a lovely way to bring some of that summer sunshine and produce into your day in the form of a healthy and filling breakfast. Along with the oats and flax crumble and a big dollop of Greek yogurt, its a great balance of healthy carbs, protein and fats with the natural sweetness of the peaches to make for a great start to the day.
A stir fry is a great way to pack in lots of healthy ingredients, leafy greens and cruciferous vegetables in a quick, easy and delicious way. So speedy to make and endlessly flexible depending on which vegetables you have on hand. This recipe is also great with miso marinated tofu nor salmon instead of chicken and you can add more chilli for an extra kick.

These are bright green on the inside and rammed full of so much goodness, the peas give the falafel a lovely sweetness as well as a vibrant colour. These are great served with the tabouleh and tahini dressing as a meal or popped into a pitta pocket with some hummus and salad as a great alternative to a sandwich. The peas make them sweet enough to be kid friendly too so this is something the whole family can enjoy.
A creamy, luxurious risotto is the ultimate comfort food for a chilly Autumnal evening but this recipe has a healthy twist of swapping risotto rice for protein rich, whole-grain quinoa. Folding in glazed roasted butternut squash purée gives richness to this warming classic which also has caramelised cubes of squash to really let the flavour of these glorious seasonal vegetables shine.

This is one of my go to recipes. I include a quick recipe for super easy pesto but if you’re pushed for time then a bought jar of good quality pesto is perfect here too. Also really yummy with sun dried tomato pesto. The roasted Mediterranean vegetables can be endlessly adapted to whatever vegetables you have on hand. I tend to make a big batch and use in lots of different salads, sauces and other dishes for the rest of the week.

Here's a healthier focaccia recipe while still retaining all that pillowy, oily deliciousness with added whole spelt flour & ground flaxseeds along with some seasonings into the dough.
This seems like a daunting thing to make but actually the pastry is rough and rustic by nature which takes the pressure off a bit! I love artichoke and this is incredibly tasty and packed with flavour as well as filled with nutritious veggies. Delicious served hot or cold with a big green salad or steamed greens.
